There are several methods to recover deleted SMS:

On iPhone, the first method is to restore an old backup, the SMS may still be present there. If you use iCloud, it's even easier, just go to https://www.icloud.com/, then SMS. Look for the messages you deleted. Then on the iPhone go to Settings / iCloud / Disable SMS (even if it’s counterintuitive), choose Keep on my iPhone, and then Reactivate SMS.
On Android, the apps Read Deleted SMS Messages and SMS Recovery can help recover deleted SMS.
