Hello,
1) I am on fiber optic, and the city where I am, my subscription allows me to have 1gb/s. When I update a video game on my console, the speed varies between 80Mb/s and peaks a little over 100Mb/s, but it depends, I’ve already experienced speeds of 8 meg, is that normal? Is my speed on the console correct?
2) And my other question is why I don't reach those speeds when downloading a video using a download software on my PC, I only get 6Mb/s. Even though I am using an ethernet cable. I was told it could be due to the PC's network card?

I have already done these tests, and it varies between 300 and 500 mb/s. Why such a big difference between my console and the PC?
On my phone via Wi-Fi, I get 500 mb/s, and on the PC, I have much less, with a subscription of 1 gb/s.

You might be mixing up the units as well.
In principle, speeds are expressed in Mbit/s or Mbps while downloads are in MB/s or Mo/s or MBS, and since one byte equals 8 bits, then 1 MBS == 8 Mbps.
Also, how is your console connected?
Finally, the download speed depends more on the load of the servers than on the speed of your connection. To compare, try here:

The PC is connected via Ethernet, and my console is also connected via Ethernet.
And on the same site, Speedtest, with my phone, I get between 300 and 600 mb/s, and with the PC via Ethernet, I get between 36 and 40 mb/s.

There must be some software or an antivirus installed that limits the bandwidth.
Start with a test by booting in safe mode with network support.
