Ryzen 7 5800x overheating issue

Hello,

I have a problem with my brand new Ryzen 7 5800x processor that I just installed.

It is very well cooled by a Noctua NH-D15, maintaining 60 degrees during gaming, everything is fine. The only downside is when I'm on the desktop.
In fact, as soon as I launch Chrome or any application, it heats up to 80 degrees and then drops back to 30 or 40 within 10 seconds for no apparent reason, knowing that the CPU usage is only at 5 to 10% maximum on the desktop.

I really don't understand this phenomenon. Does anyone have a solution?

My setup:
RTX 3080 FE
Ryzen 7 5800x
Noctua NH-D15
32GB Corsair DDR4 3200 MHz
ASUS ROG Strix B550 Gaming WiFi motherboard
1200W Corsair Platinum power supply

    Hi,

    it can't go up to 80°C and back down to 30°C in less than 10 seconds.

    What temperature monitor are you using? Try to change it...

      Hello, I'm using Armoury Crate, I might be exaggerating when I say 10 seconds, but it drops in temperature very quickly, like in 30 seconds. Aside from the software, the CPU cooler starts spinning quite loudly, so it does still heat up for no apparent reason.

    Try checking with another monitor, like hwinfo:
