I just solved my problem by going to the Play Store, searching for Google Chrome, and updating it. For me, everything is resolved, good luck!

Then I updated "Chrome".
Next, I reinstalled "Android System WebView".
After each step, I restarted the phone.
And miracle...
My Redmi Note 8 Pro is working again and the apps open.
