Non-selectable filter gallery in Photoshop CC

Hello,
My project is a bit special. Indeed, I want to create a file intended for a large digital print (111.8 cm / 500 cm) on an Epson printer.
The idea is to create a water texture in this workspace. After some research, I came across a tutorial recommending the use of the "Sponge" filter.
However, once my workspace was determined, I couldn't access the filter gallery.
I should mention that I am working in Photoshop CC, in CMYK.
Could someone please tell me how to apply this texture or at least let me know if it's possible on such a large surface?
