Bonjour,
The "Old Firefox Data" folder is created when you update Firefox or if you reset your profile. It contains a backup of your previous Firefox profile, which may include bookmarks, passwords, settings, and other data.
You can move it elsewhere if you want, but be cautious about losing access to your old data if you need it.
