Convert an MKV multilingual file to MP4

Hello,
The question I'm asking has undoubtedly been asked many times before, but my issue has a divergence for which I have found no solution.
I have a video file in .mkv format, and when I play it on VLC, I notice that it contains 2 other languages in addition to the original version (French and Italian), as well as subtitles in those same languages.
I want to convert this video to .mp4 format for iPod, but by default, the video is played in French without subtitles, and I only want to keep the original version with French subtitles.
Is there a software capable of performing this type of conversion, selecting the language and the available subtitles?
Or if I convert the video to .mp4 with any conversion software, will changing languages and subtitles be possible directly during playback on iPod?

Hello,
Try using Freemake Video Converter which might allow you to select the language as well as the subtitles.
Otherwise, you will probably have to use something like MKVCleaver or MKVExtract, but I'm not familiar with the latter or other software, and then remux everything into your MP4 file. The subtitles will then be embedded in the video.

additionally, there is also MkvToMp4. you can select your subtitles etc...

This software has been very useful to me, thank you very much.
However, I'm experiencing an issue with some of my files: Although I have different subtitles available on VLC, the software does not recognize them. There is the video track, the different audio tracks, but no subtitles. I tried converting it just in case, but once done, the subtitles disappeared on VLC.
I tried extracting the tracks I wanted with MKVCleaver and MKVExtract but neither of these programs work, and the extraction doesn't start. How could I proceed?
