On Fraytoop's Soundcloud page, there's Fraytoop Feat. 2pac - Nothin' But Love, for the entrance music. (The instrumental: Fraytoop - Warrior Rapper). And for the end of the show: Fraytoop - Still Fresh. Maybe an artist who collaborated with Jamel to make those tracks there :)

Everything is there but impossible to get hold of.

In my opinion, finding these versions must be impossible because I think the company or rather the label manages the rights very well.
There are always leaks on the net and amateur videos on YouTube but if you've noticed with Jamel, the videos online are those from the ads for the DVD.
Type everything about Jamel and go to videos and you will find no video extracted from the DVD except for the ads.

And for the ending music, it is indeed a re-composition of Empire State of Mind by JAY Z. I went to his show in March in Rouen and we got to hear the real version with Jay Z and Alicia Keys, which made the finale much better in my opinion ^^.
