To prevent OPERA from updating, you can rename the files "opera_autoupdate.exe" and "opera_crashreporter.exe"; this is a solution I use.
You can also set a rule in your firewall at the application level to block Internet communication for these two files.

My browser updated itself "all by itself"; and well (although I was cautious after having been burned), I didn’t see it coming...
…have other Opera users experienced the same "absence" or am I really an idiot?

The current system is that Opera checks occasionally if there is a new version and asks you before installing anything. It is possible that while pressing "enter" while browsing the web, you came across this message and accidentally clicked "yes".

I don't know if it's current, but since you posted your message, we've easily changed the way Opera handles updates.
I just upgraded from version 10.62 to 10.63. It kindly informed me that it was available, and I accepted for it to install. However, I wasn't careful enough, and I've had this problem before: you need to uncheck a box in the update announcement window if you don't want updates to happen automatically in the future.
If, like me, you forget to do that, don't panic: Tools > Preferences. In the "Advanced" tab, under the "Security" section, you have a dropdown menu at the bottom of the window with three possible options for how Opera manages updates.
Also, you’re not clueless; I had the same issue as you, and I think it was before I upgraded to version 10 ^^

Yes, I completely understand. The current system is that Opera checks periodically for a new version and asks you before installing anything. It's possible that while pressing "enter" while browsing the web, you came across this message and mistakenly pressed "yes."
Since updates cannot be automatic on Opera, there is no option to disable it :D

Normally, Opera informs you that an update is available and asks if you want to update (you can respond "no"). And why don’t you want to update Opera? Usually, small versions like this fix quite a few bugs and security vulnerabilities. It is highly recommended to update your browser!
