Uh... I don't know which key it is on PC because I'm playing on Xbox 360...
But it's the same key as when you have an interaction to do, like using a computer or turning on a light, etc... to have the interaction, you need to make sure to follow the captain discreetly, until you are right behind him; and there, if you're close enough to him, you should have some sort of hand that wants to grab something: you just have to press the interaction key!

You have to sneak up behind him and then, when he turns around, he will try to kill you by pulling out his gun, and that's when you knock him out :)
