Hello,
I was in the last dungeon and I saved just before the final boss (Ganordof). Then I fought him, I defeated him, there were the thanks, and finally the image with the sort of mermaids with "THE END" written on it, then it went back to the title screen (press A and B to start). I went into my game and found myself just before the boss, as if I hadn't done anything. So I wanted to know if this was normal or if it was a bug in the game...

yes, it's quite normal, I've finished it too, and there's nothing to unlock, which is a shame)
once saved, you'll always return before the boss, there isn't an option to save at the end, like in the other Zeldas. there you go

As Linkarwen said, the game actually ends as if you hadn't fought the final boss... It's normal!
But to delve deeper, there are so many things still to do that you won't get bored playing it!
There are the most obvious things like the Cave of Ordeals, heart pieces, specter souls (infinite rupees after all)...
But you can also train! Grab your wooden shield and make it disintegrate from a flaming arrow. You'll find yourself without a sword! Take the old sword from Toal. And fight, practice your dodging!
There might also be things left to discover like the cemetery, the treasure room, the legendary fish spot outside the boat fishing center...
In short, you’re probably far from having completed everything!

Big fake, good thing I have everything you say, I even have infinite arrows and bombs thanks to a bug and I'm sure it won't do anything... no... But the game isn't over, there are still things to discover like secret places... like the treasure room, you know the locked door right next to Ganondorf's room...

You too? It happened to me the same! I beat everything and it gave me the credits, the thing with the ending and it didn't save! It just did it to me! It's frustrating. I'm going to look into it.

It's because you need to have all the objects, all the insects, and all the hearts. After that, you go back, and then Zelda will say, "Since there's power, you might as well take it." You follow her to Kakariko, and you kill her. There you go.

Hello.
Adélink, what happened after you defeated the final boss is completely normal. If you have played another Zelda game, you might have noticed it. You can't save afterwards, otherwise you would never be able to fight the boss again. The final boss is infinitely repeatable, that's all.
