Réception mail erronée (caractères accentués)

Mais je ne comprend spas cette fonction, pas plus que htmlentities qui visiblement est plus adaptée à mon cas...

Comment l'adapter avec une de ces fonctions pour qu'à la réception de l'e-mail, les caractères apparaissent normalement?
