I deleted a friend from Facebook and since that deletion, I no longer see him online on Messenger (knowing that I am not blocked). Moreover, my last message was delivered but not read.

You can configure it online, if you want it to appear to everyone, to your friends, or to no one... if you can't see anything, it's because he set it to his friends (and since you deleted him.. there you go :) ).
