I am from Martinique and I would like to write in Creole:

"Thank you very much"

I have seen several spellings...

Mèci An Pil or Mèci Anpil???

    RoMa is absolutely right.

    Moreover, "anpil" or "an pil" is not a proper noun, and Creole is not German:
    so there’s no reason to capitalize!

    Your expression will therefore be 
    " Mèsi anpil "
    ;
    just as in French it would be 
    " Merci beaucoup "
    , without a capital B...
