Hello,
We more often see "anpil" as one word like "anlo" as here http://martiniqueantilles.centerblog.net/7-dictionnaire-francais-creole-martinique but "an chay" in two words.
And "mèsi" rather than "mèci" (http://www.potomitan.info/dictionnaire/m.pdf, Raphaël Confiant) -

Moreover, "anpil" or "an pil" is not a proper noun, and Creole is not German:
so there’s no reason to capitalize!
Your expression will therefore be" Mèsi anpil "
;
just as in French it would be" Merci beaucoup "
, without a capital B...
