Login option "password" disappeared

Hello,
I just did a Windows update.
After rebooting, Windows asks me for a PIN to sign in (whereas previously I used a password).
I bypass the thing by signing in with my Microsoft account and doing the verification by phone, everything goes fine.
I then go to "Settings > Accounts > Your info", I verify that I am linked to my Microsoft account and not a local account: OK.
I then go to "Settings > Accounts > Sign-in options" to restore the "Password" option, but there... magic... the option is not in the list...
Does anyone have any idea what’s going on?
I’m starting to get fed up with Windows changing my options during updates...

I think we should look into Windows Hello, because Microsoft forces the creation of a PIN.
Windows Hello forces the creation of a PIN on Windows 10
Disable:
Require Windows Hello sign-in for Microsoft accounts
