I would like to delete the old Mac OS updates.
I was on Mojave... and now I'm on Catalina.

I still don't understand...
Mojave is earlier than Catalina. (Mojave = macOS 10.14 and Catalina = macOS 10.15).
If today the Mac is running Catalina, there are no more Mojave updates available on the Mac, since it has upgraded to a version higher than Mojave.
In fact, there are no updates at all on this Mac.
For Catalina, Mojave is an old version.
If you want to revert to Mojave, there is only one solution: completely erase the hard drive currently running Catalina, and reinstall Mojave. And this is not trivial, since you must first back up everything that needs to be preserved elsewhere, restore the Mac to its original version (which I do not know), and then install Mojave, followed by reintegrating the data you have backed up elsewhere. Not to mention that if the Photos library has been used under Catalina, it will no longer be readable under Mojave.

I have indeed installed Catalina over Mojave. However, my screen display is not stable... I was thinking of completely removing the Mojave updates to solve the problem...
ok. I understand. But since I upgraded to Catalina, a lot of settings have changed. The trackpad on the MacBook has become hypersensitive. The screen is no longer stable. I thought it was due to a version incompatibility, but apparently not...
Try repairing the system by starting from the recovery partition...
You start the Mac while holding down the cmd and R keys. When you get the macOS Utilities window, you choose Disk Utility, then you select your usual working partition, and you click the SOS button.
When everything is done, you exit Disk Utility, then you exit macOS Utilities, and you restart the Mac.
