Soundbar on Sony TV?

Good evening
I have a soundbar with an optical input and a jack input.
I wanted to know if there is a real difference in sound between optical cable and jack cable?
Additionally, my Sony TV is strange; it has a jack output (which also acts as an optical output if you put a simple little adapter on the end of the optical cable, there isn't actually a traditional optical output)

A priori, an optical connection (digital audio signal) offers better sound quality.
A jack cable connection transmits an analog signal (more susceptible to interference).
