Good evening, I would like to know how I can turn off the hourly beep on my watch (which is very annoying at night!) I've already looked online but the solutions I've found don't seem to be correct. Thank you in advance for your help.

My son eventually found a radical solution: a good whack with a hammer! The trouble is, there's no hourly beep during the day either... and it constantly shows the same time!
I told him he would have been better off leaving his watch in the kitchen overnight: he was quite surprised not to have thought of it himself...
But if you don't have a kitchen at your place, or if that's exactly where you sleep, you'll need to store it elsewhere: the bathroom, the storage room, the basement, the garage, the back of the linen closet...
You could also (but I personally would avoid doing this) take the battery out when you go to bed and put it back in when you wake up; that would have the advantage of allowing you to set it to the right time!
Final suggestion: you could swap it for a friend's watch (one that doesn't have an hourly beep)...
