why do you want to remove the splitter? I don't think it bothers you and it can still be useful.
You can put a switch directly at the end of the cables, but it's still more flexible and elegant with a patch panel.
Especially since the assembly of male RJ45 connectors, while sufficient for phone use, is too imprecise for a good ethernet network (twisted wires over too long a length, the maximum allowed length is 13mm for a 10/100 Mbit/s wiring), at least for the ones at the top.
