I just bought GTA 5 and I would like to know how to play freely without following the storyline, just doing whatever I want?

Simply by walking around without going to the mission icons! ;)
I guess you'll have to complete at least the first mission to get the hang of the game, and then you're free to do whatever you want!

You can do as Flux64100 said if you just want to do what you want, but for example, to buy cars and customize them, I recommend going until the last mission to have enough money to really have fun :)
