Hello,
Every time I open Notepad, it opens the last files I worked on...
How can I prevent this because when I usually open it, it’s to create a new file and if I want to open an old one, I’d like to open it myself.

Are you talking about Notepad++?
There is certainly a preference to change for that.
Otherwise, another way is that instead of closing the program, you can close each tab you don't want anymore (ctrl+w), and it won't be there the next time you start it up. -

Just delete them before closing it!
Click on the icon that represents three sheets of paper! -
Exactly, I just had to close the tabs before closing Notepad!
