Hello,
You need to edit the PDF metadata.
The necessary tools are generally paid (Acrobat, Foxit PhantomPDF).
You can also use an online service:
https://www.fichier-pdf.fr/editeur-de-metadonnees-pdf/
The service provides the document's metadata. It also allows you to edit it (possibly delete it) and then save the changes.-

It only gives me the software that created the file, which is Writer from LibreOffice 6.3.

It provides a bit more information, but essentially, it doesn’t do any better. It should not be forgotten that this metadata can be deleted intentionally.
