Hello,
I wanted to know if it is possible to use Photoshop and all other Adobe software (Lightroom, Illustrator, etc.) without the Creative Cloud application installed on the computer.
Is it only used to install, uninstall, and check for updates for the software?
Can it be uninstalled while still using the software normally?

No, mainly to check that you are a legitimate holder of the software.
Creative Cloud is the new name for the publisher's suite(s). So if you remove it, you will no longer have Photoshop CC, Illustrator CC, etc.
To have a version that is not named CC, you need to use an earlier version, like CS2 for example:

But you will have the same issue with the update tool if you do not hold a software license.
