You might be talking about the "Shading."
It is found in the "Borders and Shading" dialog box, "Shading" tab, in the lower half of the "Style" drop-down list.
The "Dark Grid," "Light Grid," or "Dark Pattern," etc. seem to match what you are asking for.
You can apply it to text, in tables, or in shapes depending on what you select.
