To convert videos to MP3, you can use Format Factory after saving the video to your computer or use an online site like Keepvid for example.

to complement what ziggourat says, you can have the music from YouTube videos and other sites WITHOUT downloading the video

Just launch Audacity while recording as you watch the video, then save the file in one of the formats (including mp3) offered by Audacity.
