Roland VS-2480 Issue

Hello everyone!
My father has had a Roland VS-2480 for quite some time now, but despite the instructions, we can't get it to work properly.
We can create a new project and record a track only by plugging a guitar into input 1. That's it. After that, it's impossible to record any other tracks, and I've tried everything. I'm not exactly sure what the problem is, but do you have a quick tutorial other than the user manual? How do you go about recording a second track and then being able to play both tracks back?
I would like to record two guitar tracks, add a microphone, and maybe more if I can get that far... I also have a synthesizer.
