I burn a lot on 120min DVDs, that is to say 2 hours, they are 120 min 4.7GB but I can only fit 1h15 max, why is that and how can I fit more?

What are you burning?
The duration of 120 minutes only applies to DVD-Audio, just like the 80 min. indication for Audio CDs, and I seriously doubt that's what you're burning.

And for good reason: no standard governs the attribution of these labels. It is the composition of the materials used and the quality of manufacturing (flatness of the plastic discs, regularity of the groove...) that distinguishes the ‘ slow ‘ media from the ‘ fast ‘. To define the burning speed, CD and DVD manufacturers send samples of their new products to burner manufacturers, who test them. For videos, there are essentially two types of burning possible:
- data disk burning: these are movies in AVI format, and you can fit 6 movies of about 700 MB each on a DVD regardless of their durations. What matters here is the file size.
- DVD-Video burning: this is the format used for commercial DVDs, and in this case, you generally put one movie per disk (sometimes two, but not more), in order to preserve quality.
For example, Windows DVD Creation that you have on your computer limits the video duration to 120 minutes, so if you want to create a DVD-Video for a movie that is, say, 2 hours and 30 minutes long, you'll need to use another software.

No, I do not know the software available on Mac, so I don't know if I can help you further :(
But according to the presentation on the Apple website, HERE, it is an authoring software, that is to say it creates DVD-Video.
Perhaps watching the short videos might help you, or you could check the help section in the software.
From what I understand, you have access to your "library" on the right, let's say the place where videos are located on your hard drive, and you just need to drag the file for it to be accounted for.
It may limit the total maximum duration of video files like Windows DVD Maker; otherwise, in theory, for this type of software, you just need to add the files that will become the chapters of your DVD-Video.
If the software has options, check to see if you can modify something in the advanced settings, but this is purely hypothetical.
