I would like to cancel my subscription with my iPhone but I would like to keep the phone and put a prepaid SIM card in it. Is that possible?

Of course, as long as it is the same operator or the phone is unlocked.
Unlocked iPhone = Rechargeable card from any operator (be careful with internet!)
iPhone locked to Orange for example = Only Mobicarte.
