Hello,
I am working with the Saari V13 commercial management software. I created an item without stock management, and I would like to modify this item to include stock management
what do you suggest? Is it possible to make this change, especially since we have already made a sale with this item and I cannot delete it and create it again?

I don't know Sage specifically, but if the item was sold without creating stock... it doesn't change anything from an accounting perspective, it has entered and exited... that's it.
Stock management based on the input of supplier invoices allows you to quickly know at the end of the year the remaining stock of items in the store and to give them an accounting valuation.
You should be able to enter your next supplier invoice with this item even if it has the same reference.
If the stock of this item gives you a negative value or is different from the reality, a well-designed software should allow you to restore the actual quantity. (and that should be provided for in Sage). There can be breakage, loss, theft, etc... it is therefore necessary to be able to modify this data externally to the entry of supplier invoices in order to value the merchandise stock. -
