My question is the following: can the Intel i5 processor handle a 64-bit OS?

Instruction set MMX, SSE, SSE2, SSE3, SSSE3, SSE4.1, SSE4.2 x86-64, VT-x

So yes, it supports 64-bit (I think all processors from the last 3 years do, except for exceptions like the atoms).

Thank you, I had looked on wiki of course but "MMX, SSE, SSE2, SSE3, SSSE3, SSE4.1, SSE4.2 x86-64, VT-x instruction set" didn't really mean much to me...

So we can install Windows Seven 64 bit if we have an i5 processor or does it also depend on the motherboard?

Yes, any motherboard that accepts the Core i5 will be compatible with 64 bits

So there’s no problem installing Vista 64 bits, nor any other 64-bit OS (except for systems for IA-64 Itanium processors)
