Hello,
I'm looking to create open paths with the pen or line tool in Illustrator.
In the stroke palette, I can set the ends to square, round, or projecting, but what I'd like to do is create a pointed end and have the ability to change its values.

I wouldn't say that I know Illustrator perfectly (that's impossible, there are so many things), but having studied graphic design for 4 years, I think I can answer your question. However, I admit I didn't understand your request because to achieve a pointed end, you need to go to the stroke option (Window > Stroke), and as for changing the value, I don't know what you're talking about...

you need to go to outline then profile and you will have several thicknesses
